  • 3 eggs

  • 2 tbsp cold water

  • 90 g sugar

  • 1 packet of vanilla sugar

  • 90 g flour

  • Some breadcrumbs and margarine for the baking dish




1 packet of vanilla pudding powder (milk, sugar) 500 g strawberries A handful of blueberries 1 packet of light cake glaze PREHEAT the oven to 180 degrees Celsius (160 degrees Celsius for convection). Grease the cake pan and sprinkle with breadcrumbs. For the SPONGE CAKE, beat the egg whites with 2 tbsp of cold water, sugar, and vanilla sugar until stiff. Briefly stir in the egg yolks and fold in the flour. Pour the batter into the greased cake pan and bake in the oven for about 20 minutes. Let the cake cool slightly, then remove it from the pan. Let it cool completely. For the TOPPING, prepare the vanilla pudding according to the package instructions, let it cool slightly, and then spread it over the sponge cake. Wash and clean the strawberries and place them whole on top of the pudding. Then wash the blueberries and distribute them among the strawberries. Prepare the CAKE GLAZE according to the package instructions and drizzle it over the strawberries/blueberries using a spoon. For a quicker version, you can simply buy a ready-made sponge cake... it also tastes delicious and saves time. Serve well chilled with whipped cream and a few mint leaves.
