  • Pot

  • Knife

  • Cutting Board

  • 1 beef shank

  • 1/2 white cabbage

  • 4 bell peppers

  • 1 fennel bulb

  • 2 onions

  • Frozen broccoli and cauliflower florets (a handful)

  • 3 carrots

  • 1/2 celery root

  • 1 leek

  • Fresh parsley

  • 1 kohlrabi

  • 1 thumb-sized piece of ginger

  • 3 large tomatoes

  • 1 chili pepper (optional)

  • Pepper and salt to taste

Begin by cooking the beef shank in a large pot of salted water until tender and flavorful. While the meat cooks, wash and chop all the vegetables into bite-sized pieces. In a separate pan, roast the white cabbage, bell peppers, carrots, and a portion of fennel without oil until they develop a delightful roasted flavor. Add the roasted vegetables to the pot with the meat and let the soup simmer for approximately 1-2 hours, allowing the flavors to meld together. Once the soup is ready, remove the beef shank from the pot, slice it into small pieces, and return it to the soup. Season the soup with salt and pepper to taste, adjusting the seasoning according to your preferences. Sprinkle freshly chopped parsley on top for added freshness and flavor.
