Ingredients:
- Round cake pan, approximately 24cm in diameter
- 350g ground almonds
- 2 tbsp grated orange zest
- 1 tbsp ground cinnamon
- 7 organic eggs
- 350g sugar
- 2 tbsp freshly squeezed orange juice
Instruction:
- Preheat the oven to 180°C (350°F) (top and bottom heat). Grease the cake springform pan with butter and dust with flour.
- In a medium-sized bowl, mix the ground almonds well with the orange zest and cinnamon.
- In a mixing bowl, beat the sugar and eggs together on high speed with a hand mixer or kitchen machine until light and creamy (about 5 minutes). Then, on low speed, mix in the almond mixture and orange juice.
- Pour the batter into the cake pan and bake in the middle of the oven at 180°C (350°F) for approximately 55 minutes, until the cake is golden brown. When doing the toothpick test, there should be hardly any sticking, but the center of the cake should still be moist.
- Remove the cake from the oven and let it cool. The cake can be stored in the refrigerator for up to 3 days.
